Aussies Living in Thame Commemorate ANZAC Day

Friday 25 April is ANZAC Day in Australia – the commemoration of the anniversary of the landing of Australian and New Zealand troops at Gallipoli, Turkey in 1915.
Quite a number of Australians have connections to Thame, and each year, many come to visit Robin Gibb’s grave. Thame Town Council’s relief Communications & Events Officer, Belinda Lee is also from Down Under. She will be joining other expats at Westminster Abbey on Friday for a special ANZAC Day service.
Belle says it is an Aussie tradition to bake ANZAC Day biscuits as part of the commemorations.
Here is her recipe:
1 cup rolled oats
1 cup plain flour
1 cup brown sugar
½ cup desiccated coconut
½ tsp bicarbonate soda
125 gm butter, chopped
2 tbsp golden syrup
1 ½ tbsp water
Method:
- Preheat oven to 160-degrees (fan-forced).
- Grease oven tray & line with baking paper.
- Combine oats, sifted flour, sugar, and coconut in a large bowl.
- Place butter, syrup and water in a small saucepan, stir over low heat until smooth, then stir in the bicarb soda.
- Stir the wet mix into the dry mix.
- Roll level tablespoons of the mixture into balls.
- Place 5cm apart on trays and flatten slightly.
- Bake for 10 minutes or until golden, then cool on trays.
Belle says the biscuits will feel soft to touch when they come out of the oven, but they firm up on cooling.
